My Banana-Chocolate-Milk & Cookies Coffee Creation

Good Morning, Friends!

How’s this Wednesday treating you?  So far so good in my neck of the woods!

I started my day with some functional strength training.  I didn’t want to be at the gym when I first got there, but after a quick 5 minute warm-up on treadmill I was ready to kick some booty….and I did!

Then, I treated myself to the best protein shake I’ve ever created (at least in my opinion) to refuel myself.  

 Kim’s Banana-Chocolate-Milk & Cookies Coffee Creation:

  •  ½ cup Unsweetened Chocolate Almond Milk
  • 1 scp Chocolate Protein Powder (I used BSN Lean Dessert Chocolate Fudge)
  • ¼ Frozen Banana
  • Handful of Ice Cubes (guesstimating ½ cup)
  • San Marco Iced Milk & Cookies Flavored Coffee (I made this yesterday and had it iced and waiting for me this morning)

I always add my ingredients into my Magic Bullet in the same way.  First, I’ll put some liquid.  In this case it was the almond milk, but normally I use water.  Then, I throw in a scoop of protein powder, my frozen fruit and the ice.  Lastly, I top it off with some additional liquid (the iced coffee in this case).  I just eyeball the liquid I top it off with.  It probably ranges from ¼ – ½ cup.  I fill until the ice cubes start to separate from each other/float a little.  I don’t want to add to much liquid because I like my shakes nice and thick!

 Once I screw the Magic Bullet cap top on, I shake the container and then put it on the Magic Bullet base to blend.  This leads to a winning shake just about every time!     

 Let me tell ya, I was a very happy girl driving into work this morning, as I sipped my protein creation.  🙂

 The office seems quiet today, which usually means that something is brewing and random craziness will ensue in the near future.  Let’s hope that’s not the case!

 Fitness:

 In fitness news, workouts are going great!  The hardest part for me has been upping my macros to fit within my nutrition guidelines.  I wrote to my coach for check-in today and explained what’s going on in my head.  After two+ decades of being on a diet, my stomach has shrunk, but I also have many fears and I end up sabotaging myself (I am my own worst enemy at times).  I’m not going to allow myself to fall into the same patterns again.  Better to speak up now and work things out.  I asked if we could gradually increase macros instead of making such a big jump (in my eyes).  I’ll let you know what happens…

Whenever I start to doubt myself or want to veer off track I take a look at this girl right here. I know Naomi from a fitness site we used to frequent a few years ago and am so proud of her for her accomplishments!

 Daily Life:

 In other news, Rob will be going in for back surgery this week. 😦  My poor man has been in so much pain over the past few weeks.  It hurts my heart to see him struggling.  It’s minor surgery, but this is the third one he’ll be having on his back.  Please keep him in your thoughts.  I’ll keep you updated.

Oh, I just might have some positive news regarding a personal venture, by end of day.  Keep your fingers crossed for me!! I’m excited about the possibility, but don’t want to get my hopes up yet.  I literally did a happy dance last night when I figured something out.

The Calm Before The Storm

Hi Guys!

  I’m settling into work after stuffing my face with breakfast.  My stomach was growling loudly as I went in to meet with my boss this morning.  He’s been out of the office for almost two weeks, so we had a lot to catch up on.  I was excited to show him that his unread e-mails went from over 1400 to 301!  He exclaimed, “How did you do that?”  By the end of yesterday my eyes were starting to cross, but I was determined to knock those e-mails down to something much more manageable for him. 

I told him during my interview back in March that I would get him organized.  For 10 years he hasn’t had an assistant, so there was a lot for us to cover when I first started.  Slowly but surely we’re getting there….

There’s no way he didn’t hear my stomach screaming for food as we went over things.  I didn’t workout this morning, so there was no protein shake consumed during my commute.  I was very hungry yesterday, for some reason, and I guess that carried over to today. 

Nothing appealed to me as I was packing my meals for the day.  I’m tired of my usual meals.  There’s only so much oatbran one person can consume over the course of months, ya know?  I kind of threw a mish-mash of stuff into my bag, said my million and one goodbyes to Rob and then was on my way.

After meeting with my boss I hurried to the kitchen to fix breakfast up.  You know my breakfast wouldn’t be complete without coffee, right?

 Then, I always have some sort of protein.  Like today, protein on workdays is usually in the form of hardboiled egg whites.  I make a big batch on Sundays and they’re so easy to grab for breakfast and/or snacks.

Last, but certainly not least, was my Cinnamon-Raisin Ezekiel English Muffin spread with a Light French Onion Laughing Cow Wedge.

 All together now.  Smile for Mama!

 It was just what I needed!  Although, I kind of am missing my protein shake.  Maybe that will be my snack this evening. 🙂

Now that my belly is full I can work away.  The office is pretty quiet.  The majority of my coworkers who are in higher level positions are on vacation and certain people that we work with overseas are away for the entire month.  This is the calm before the storm, I’m told.  Once September hits I’m going to have to buckle my seatbelt and get ready for the ride.   Meetings galore are on the forefront and can you guess who creates the books that go along with the meetings?  Did you guess me?  If so, you’re right!

I’m going to enjoy the quiet while it lasts.  I’ll also be covering for a coworker when she goes to Italy over the next two weeks.  The quiet is going to be very short-lived, my friends, I’m telling ya.

Monday Munchies

Hi Friends!

  How’s your day going so far?  Mine has been busy, but nothing extreme.  My day started earlier than normal, since my boss wanted me in the office an hour early.  I hadn’t seen him in almost 2 weeks, because of his trip to France.  We needed to meet up, regroup and begin executing a bunch of projects that resulted from the trip.

  Even though I made sure to drink a protein shake on my way into work (and have had 3 meals since then) I have the Monday Munchies like crazy today!  The only reason I can think of, for my stomach being the bottomless pit that it is today, is that I didn’t eat quite enough yesterday.  I didn’t workout this morning, so I know that isn’t a factor.

  I’m going to try to fill up on some extra water to see if that helps.  If not, I have plenty of healthy snacks in my drawer for situations like this.  😉

My belly should know that I have a yummy dinner planned for tonight.  I was on the Muscle & Fitness Hers website over the weekend and came across a recipe for a slimmed down version of Chicken Cordon Bleu.  I haven’t had chicken cordon bleu in ages!  I’m pretty sure that Rob is tired of eating the same old things all of the time and I decided to throw this into the rotation this week.  I’ll let you know how it goes with a recap tomorrow.  If you’re interested, you can find the recipe here.

Ok, I have to run.  Work beckons, ya know?  Less than 2 hours to go and I’ll be on my way. 🙂

Dinner in 20

Man am I pooped!  I left work about 5 minutes early and made it home in record time.  I wasn’t in the best mind frame during the drive though.  As soon as I got up from my desk I realized that my knee is worse than I thought.  It feels so much tighter and I can only bend it back about halfway now. 😦  I slowly made it down the spiraling staircase to the first floor and then down another set of stairs to get to my car.  I tried calling the doctor’s office to see if they can fit me in tomorrow instead of Monday, but they were already closed.  I’m thinking that I will call them first thing tomorrow morning.  If they can fit me in then work will just have to wait for me.

I can’t really explain how the time flew after I walked into my apartment.  I remember getting the mail, taking Advil, putting my leg up and checking e-mail.  Oh yeah, I might have been on twitter for a bit too.  😉  The next thing I knew it was 7:30 and I didn’t even have an idea of what I’d be having for dinner.  Want to know what I did know?  I knew I was NOT having an egg white & veggie omelet with potato again.  I’ve been so lazy over the past few weeks and really haven’t made it to the grocery store that I’ve been eating this meal with some small variations over the past 2 weeks.  My belly said NO MORE, as much as I love breakfast for dinner (or any time of day, in fact).

I scrounged around my cabinets and freezer and ended up with a yummy dish in 20 minutes flat!  Move over Rachael Ray, I’ve got your 30 minutes beat!

Dinner in Less Than 30

I boiled some water for my CarbaNada noodles.  They only take 5 minutes to cook, which I love.  They’re also packed with 12 grams of protein. 🙂  While the water boiled, I chopped up some veggies (pepper, mushroom & zucchini) and even put together a batch of roasted broccoli (still in the oven as I type), which I’ll use tomorrow night.  I threw my sliced veggies into a pan with a serving of Morning Star Farms Meal Starter Crumbles, minced garlic and some tomato tidbits.  Once everything was cooked and the water was drained from the pasta, I threw everything together and sprinkled with a bit of parm.

Mmmmm…..

Now, my leg is elevated and I’m ready to settle in for some mindless entertainment.  First, I think I better go check on that broccoli before I have more issues than just knee problems.  If I set the fire alarm off I don’t know how fast I’ll be able to run to shut it off!
