Carrot Cake for Breakfast?

Happy Friday, Loves!

So sorry to have disappeared on you again.  Work has been absolutely nutzo for me lately.  When I say nutzo I mean that it feels like I walk in, blink and the day is over.  There’s no time to think.  You just have to DO and get things done.

That being said, I’m absolutely thrilled to have the day off of work today, due to the holiday.  Do you ever feel like even on your days off they really aren’t a day off?  I have a to-do list a mile long.  Luckily, my partner in crime works from home most days and he’s going to help me tackle some things… going to look at cars since my lease is up next month.  I feel confident knowing that he’ll be at my side when I go to the dealers.  I got rooked with my current car and nothing will get by Rob.  He won’t let them push me around.

Knowing that I have so much to do, I made sure to get my workout in first thing this morning.  Cardio and legs today, folks.  I was dripping by the time my session was over.  Love that!

I was all set to have a shake when I got home, but I walked in to find that my San Marco coffee order had arrived.  Yay!

Instead of a shake, I decided to make my pumpkin protein oatmeal to pair with the flavor of the day….

Carrot Cake!

The house still smells somewhat like cream cheese frosting, which is one of the flavor notes in the coffee.  So good.  I mean, nothing is going to compare to a bite of real carrot cake, but this made me happy to start my day with.

I’m looking forward to trying the other flavors.  The way I see it, there are two days to the weekend and I’ll have tried them all by the time the weekend is over.  Then, the tough decision of what I’ll be brewing Monday morning will ensue. 😉

Anyway, the coffee, protein pumpkin oats and a side off egg whites will give me the staying power to car shop today.

Sunday Yoga & A Breakfast Treat

Hi Friends!

How has this weekend been treating you?  Mine has been relaxing, filled with lots of sunshine and friends.  I must admit that as each day comes to an end my anxiety starts growing in anticipation of the work week ahead.  Currently, my upper left eyelid is twitching (literally) due to the anxiety. 

I’m trying to stay in the moment and focus on the positive.  I figured I should start my day off with some yoga to add a little balance to my life.  This was only my second class and I enjoyed it even more than the first.  I always thought that I would have a hard time staying in the moment in yoga.  I thought that my mind would be racing and I wouldn’t be able to be at one with myself.  Everyday problems and my to do list are the furthest thing from my mind when I’m in class though.  It’s been good for me to get away for that hour and connect with myself.

After balancing my mind and body, I decided to add some deliciousness to my life.  Growing up, pancakes were always my favorite breakfast.  Every birthday they were my pick when my mom asked what I would like to eat to start my special day.  Not only are they delicious, but I think they bring a source of comfort to me.  The only thing better would have been if my mom was here to set them in front of me and give me a hug.  Hers always taste better.  I think it’s because I know they’re made with love. 😉

As you can see, mine must have been absolutely horrible.

I enjoyed them alongside a Starbuck’s Venti Awake Tea while reading over a running program I found on the Women’s Health website. 

I’m a horrible runner, due to my knee issues, but I found a beginner’s running plan that I’m thinking of starting this week.

Now, Rob & are heading out onto the water for a couple of hours to get some kiteboarding in.  There weren’t any instructors available to teach me today, so I’m bringing my kindle along to read while Rob boards from shore to shore.

Later on, friends are coming over to hang out on the boat and hopefully we’ll spend the night with lots of laughter and good company.

The Calm Before The Storm

Hi Guys!

  I’m settling into work after stuffing my face with breakfast.  My stomach was growling loudly as I went in to meet with my boss this morning.  He’s been out of the office for almost two weeks, so we had a lot to catch up on.  I was excited to show him that his unread e-mails went from over 1400 to 301!  He exclaimed, “How did you do that?”  By the end of yesterday my eyes were starting to cross, but I was determined to knock those e-mails down to something much more manageable for him. 

I told him during my interview back in March that I would get him organized.  For 10 years he hasn’t had an assistant, so there was a lot for us to cover when I first started.  Slowly but surely we’re getting there….

There’s no way he didn’t hear my stomach screaming for food as we went over things.  I didn’t workout this morning, so there was no protein shake consumed during my commute.  I was very hungry yesterday, for some reason, and I guess that carried over to today. 

Nothing appealed to me as I was packing my meals for the day.  I’m tired of my usual meals.  There’s only so much oatbran one person can consume over the course of months, ya know?  I kind of threw a mish-mash of stuff into my bag, said my million and one goodbyes to Rob and then was on my way.

After meeting with my boss I hurried to the kitchen to fix breakfast up.  You know my breakfast wouldn’t be complete without coffee, right?

 Then, I always have some sort of protein.  Like today, protein on workdays is usually in the form of hardboiled egg whites.  I make a big batch on Sundays and they’re so easy to grab for breakfast and/or snacks.

Last, but certainly not least, was my Cinnamon-Raisin Ezekiel English Muffin spread with a Light French Onion Laughing Cow Wedge.

 All together now.  Smile for Mama!

 It was just what I needed!  Although, I kind of am missing my protein shake.  Maybe that will be my snack this evening. 🙂

Now that my belly is full I can work away.  The office is pretty quiet.  The majority of my coworkers who are in higher level positions are on vacation and certain people that we work with overseas are away for the entire month.  This is the calm before the storm, I’m told.  Once September hits I’m going to have to buckle my seatbelt and get ready for the ride.   Meetings galore are on the forefront and can you guess who creates the books that go along with the meetings?  Did you guess me?  If so, you’re right!

I’m going to enjoy the quiet while it lasts.  I’ll also be covering for a coworker when she goes to Italy over the next two weeks.  The quiet is going to be very short-lived, my friends, I’m telling ya.

A Kahlua Kind of Morning

Hi Friends!

Don’t worry, I haven’t resorted to starting my day with a shot of Kahlua even though it might have been nice after the drive in I had into work this morning.

Instead, I started my day with a quick warm-up on the treadmill at the gym and then pumped some iron to hit back and biceps.  Getting my workout out of the way before work always starts my day on the right foot. 

It was still in the mid-70s when I stepped out to head back home.  I closed my eyes for a second and breathed in deeply.  Ahhhh.  I need to remind myself of that feeling whenever I want to shut my alarm off and roll over in bed (which I’ve been doing way too much of lately).

Rob had to be out of the house early this morning.  Since he was in the shower when I made it home, I decided to use my time wisely by making my meals for the day and brewing some coffee.  I was excited for this coffee, which was a new-to-me find at the grocery store over the weekend.


I mean, how could you go wrong with Kahlua? 😉

When I visited my mom a few weeks ago, she treated me to Kahlua coffee from her Keurig coffee maker.  Kahlua was my favorite drink of choice in college and the flavor brought me back to those days (I stick to vodka when I do drink now).  I’m a HUGE coffee lover and always peruse the coffee aisle when I make a trip to the grocery store.  You never know what interesting flavor you might find.  I was ecstatic when the Kahlua bag caught my eye.  I have a regular ol’ coffee maker, so my mom’s pods wouldn’t work for me.  Now, I can enjoy the Kahlua flavor from home whenever I want!

Before hitting the shower, you know I had to have a quick taste of the freshly brewed coffee.

Excited For My First Sip

I wish I could give you a taste through the computer screen.

 Mmmmm….it was enough to make me want to take my hair down and relax for a while.

Sadly, I couldn’t because I was already behind schedule.  This long mane of mine takes some time and I needed to get into the shower…STAT!

As I was scrubbing up, an idea came to mind.  The Kahlua coffee was going in this morning’s protein shake.  Oh yes!  That’ll get me moving!  I quickly finished up in the shower, threw the coffee into the fridge to cool down, got prettied up and then made my way back to the kitchen.  I packed my lunch bag as I gave my shake a whirl in the Magic Bullet. 

It was a Kahlua-tastic Protein Perfection!

I think it would put a smile on just about anyone’s face.  I know it did for me.

That gym session really revved my metabolism.  Two hours after finishing my shake my belly was grumbling.  I just downed 3 hardboiled egg whites and a toasted cinnamon-raisin ezekiel english muffin, which I spread with a thin layer of natural peanut butter.  My belly loves me….for now. 🙂

One of THOSE Days

Hi Friends,

Today is moving pretty quickly, which I’m happy about.  Once Monday is over we’re that much closer to the weekend.  Is it sad that I’m already thinking about the weekend?  With this past weekend seeming to have flashed by in a blink and a morning filled with mishaps it’s no wonder I’m already looking forward to Friday night!

When I put my head on my pillow last night my heart was happy with having been reunited with my relatives and with Rob snuggled close by.  I triple checked that my alarm was set for 5 AM because this girly was getting her behind back to the gym before work. 

I had been on such a roll with my workouts, but after those very stressful weeks at work last month my morning routine fell by the wayside.  Towards the end of last week I was looking into some new workout routines to get me going again.  My new routine was printed out and in my gym bag, I had charged my iPod, set my gym clothes out and had water chilling in the fridge.  Nothing was going to get in my way!

The alarm sounded at 5 AM and I knew I could hit snooze once before getting up.  As soon as I swallowed I knew I was in trouble.  I caught Rob’s sore throat. 😦  Noooo! Sore throat or not I was getting to the gym.

I pulled myself out of bed and into the bathroom to take my measurements.  I went down a few inches since the last time I measured, which made me happy.  I gave Rob a peck on the cheek and headed out the door.  The gym is only a 5 minute ride from the house and I decided to blast the music to get me charged up, since I was still half asleep.

After parking the car, I clicked the lock button as I walked towards the gym.  Wait, was there a beep?  I started walking back to the car, clicking the lock button again, with frustration, and still no sound.  I pulled on the door and sure enough it was unlocked.  My car has one of those automatic start buttons, so I don’t really have a key.  There’s a key-like piece that fits into my clicker which I’ve never had to use before.  I fiddled with things for a while and finally locked the car.  I knew the car problem would be on my mind the duration of my workout, but I was getting the workout in no matter what.

I walked into the locker room to put my things away and realized I couldn’t find my iPod anywhere.  I searched my gym bag’s 3 compartments a million multiple times and still couldn’t find it.  Finally, I decided too much time had already been wasted this morning with other things.  I grabbed my workout routine and my bottle of water and walked out to get things started. 

Frustrations aside, I love my new routine and was so happy that I decided to make some changes.  I can’t wait to try the rest of the workouts later on this week!

I always feel great walking out of the gym before starting my work day.  You feel like you already got something accomplished before some people have even started their day.  Today, the happiness quickly faded when I got back to my car and….the car wouldn’t start.  Errrrr!  After fiddling around again for 10 minutes or so I was able to get the car started and made my way back home.

I then whipped through the spare bedroom to look for my iPod.  I found it amongst some papers, but I’m still not sure how it wound up there.  At least I didn’t have to worry where it was anymore.  Putting that behind me I was able to take my shower and get ready.  My routine for getting ready usually involves turning my flat-iron on at the time I start blow drying my hair, which I did.  Unfortunately, when I went to use it, it was still cold.  I realized that the fuse to that outlet had blown (at least it wasn’t broken), and got it heating up again.  I think that it was at this point that I was realizing what kind of morning it was going to be. :/

I decided to not just stand around waiting for the flat-iron to be ready.  Instead, I made my way to the kitchen to pack my meals up.  Since yesterday’s reunion ran much later than I had planned, I STILL haven’t gone to the grocery store.  Luckily, Rob had ordered a grilled chicken salad for me last night that was WAY too much to finish in one sitting.  I knew the remainder of the chicken would be part of my lunch today and decided that I would switch things up by adding some kidney beans to my salad.  In my haste to drain the can, I ended up cutting my hand.  Yep, one of THOSE days, for sure.

I wrapped things up in the kitchen, went back to the bathroom to finish my hair, gave Rob a kiss and was out the door.  I got into the car and can you guess what happened?  If you guessed that it didn’t start again you’re the winner!  I tried to get things going for 15 minutes.  I felt horrible having to bother Rob while he wasn’t feeling well, but I didn’t know what else to do.  He quickly got out of bed when he saw the worry on my face and wouldn’t you know he got the car started on his first try?  WTH?!?!?!  We then tried shutting and starting the car a number of times to be sure it would be ok.  Of course, it worked every time with him there!

Oh well, I needed to get on my way.  Rob waved me off and I made it to work in record time.  I drank a protein shake on my way in, but I was famished by the time I made it here.  I guess after that workout I needed more than the shake.  I got settled in and shortly thereafter made breakfast.

Tea for My Sore Throat

After making my belly happy I was able to get on with the work day.  A short while ago, my stomach was calling out for more.  I pulled out the salad I cut myself making earlier and chowed down.

After finishing lunch, something told me I should check my car.  I went outside to give it a start and dun, dun, dun….silence. Of course!  I text Rob to let him know the situation and he assured me that he will stop by on his way home from work to see what’s going on.  If it starts on his first try again I might have to question if I’m just going crazy.  😉

Ok, back to work I go.  I want to make sure I have everything taken care of in case I need to take my car in for service tomorrow morning.

Friday Heart to Heart

Happy Friday, Friends!

How’s your day treating you so far?  I was a VERY sleepy Kim this morning.  My head just felt out of it.  You ever have that hit by a truck feeling where you just can’t seem to wake up?  That was totally me when I rolled out of bed.

Luckily, I was smart enough to get all washed up last night so I could sleep in a little bit extra this morning.  I always say I’m going to sleep in on the weekend, but it hardly ever happens, especially when it’s beautiful out.  So, any extra little bit of rest I can get is appreciated.

My boss will be back in the office on Monday, so I’m finishing up a few last-minute projects before his return.  I want everything to be as organized for him as possible.  I can only imagine how hard it is to be out of the office for 10 days.  I’m so excited for him to see his office.  I wish I could be there when he first walks in, but I have a feeling he’ll be in extra early on Monday and I’ll miss it.  He isn’t going to know what to do with himself!

Now, I’m settling in at my desk with some breakfast and my second cup of coffee for the day.  My foot heater is on, so I’m nice and toasty.  I’ve been drinking a protein shake on my way into work every morning.  Most days I workout before work and the shake is a nice pick me up.  It also is helpful because I sometimes walk into disaster when I arrive at work and don’t have time to eat as soon as I would like.

I sipped a chocolate and banana shake for my car ride today and am now enjoying:

Let’s see.  What do we have here?  For starters, a bowl of Kashi Heart to Heart with berries and some unsweetened almond milk.

I love when the almond milk is ice cold (so refreshing!).  Most days I have to wait so long to eat this that it’s luke warm. 😦

I had a hard-boiled egg white for some protein.

Ok, I guess it’s about time to buckle down and get some more work done.  My boss just called and asked me to come in early on Monday.  I guess I know I’ll be watching True Blood (Yay!) on Sunday night and then hitting the sack.  Let’s not think about Sunday just yet though. 😉
